Warm Roasted Vegetables and Goats Cheese Salad!

I’m not quite sure how it happens given I’m still in the hot sunshine of Dubai, but I seem to have landed myself with the ‘winter’ semi-flu. That tickly throat/chest type of thing – a little worrying given this weekend I’ll be hitting minus degrees for skiing in Andermatt!

It means I’m on full health alert and I’m going to try and turn this round in a few days max! L-Glutamine is my go-to for boosting my immune system when I’m ill and the other is diet. Feeding my body with LOTS of healthy goodies generally gets me back to full health in no time, and that’s where this recipe has come from! That, as well as the fact I know Christmas is going to be a slightly indulgent affair so I like to be super clean-eating in the run up to it!

I know a plate full of roasted vegetables may not sound like the most exciting thing in the world but I promise you, it’s such an incredibly yummy dish with loads of different flavours and textures, I’ve become rather addicted to it since I first made it! Topping it with goats cheese steps it up a notch further for a dose of creamy goodness, and feel free to sub the goats cheese for another type if you’re not as much of a fan as I am.

The best thing about a warm roasted vegetables salad is there are no strict rules. Last week I had red peppers and radishes in the fridge so I threw them in too (you can see that recipe online in my ‘What I Eat In A Day Vlog here’) and it works for almost every vegetable! The ones I’ve used here are put in at the same time so very little fuss and work involved for such a delicious result!

I’ll have this veg & goats cheese salad on it’s own for lunch or if I want something a little more substantial (or perhaps for a dinner party) you can serve it along side some white or red meat. Having said that, you’ll be surprised just how filling it is and that feeling of literally serving you body a whole bowl full of goodness makes you feel great!

Yummy Roasted Vegetables and Goats Cheese Salad!

Yummy Roasted Vegetables and Goats Cheese Salad!

Serves: Serves 4 medium portions
Ingredients
  • A selection of your choice of vegetables.
What I have here are:
  • One packet of baby leeks (around 10) - Tips and ends cut off
  • 250g Broccoli flourets (Tenderstem broccoli is also really yummy)
  • 200g baby carrots - tips cut off and sliced in half if large.
  • 1 large red onions, peeled and cut into chunks
  • 1 large courgette, thickly sliced
Marinade
  • A good glug of olive oil (4 tbs measurements)
  • A dashing of balsamic vinegar (1.5 tbs measurement)
  • 3 large garlic cloves, crushed.
  • 1 tbs whole grain dijon mustard
  • Sea salt and black pepper to season
  • Optional: Chili flakes for added heat
Goats Cheese
  • 50g goats cheese
Instructions
  1. Prepare the vegetables by washing them and cutting off any appropriate tips and ends.
  2. Place them in a large baking tray together, you may need two if the vegetables are on top of each other, it's important to have them relatively spaced out.
  3. In a bowl, mix together all the ingredients for the marinade and then pour this over the vegetables.
  4. Using your hands, mix everything together making sure the vegetables are coated.
  5. Bake in the oven for 30-40 minutes until the vegetables are cooked (the carrots will be the last ones to cook so use these as your barometer).
  6. Remove from the oven and top with the goats cheese, serve hot.
