Wild Rice Salad with Honey Dressing

You know the kind of days when you really wish you had something in the fridge that meant you didn’t have to do anything but eat!? Something healthy, but delicious too that steers away any temptation to reach for the biscuit cupboard?

Well, I might have just found the thing.

The Secret? A delicious Manuka Honey dressing and ingredients that last well!

This is one seriously tasty salad with a healthy mix of complex carbs, fresh fruit, creamy feta and nutritious fats that will keep you feeling full allllll day long, until your next meal. There’s not many recipes out there, I don’t think, that taste good being cooked the day before and all this rice dish needs is some boiling the night before, and then putting everything together in the fridge with the rest of the ingredients.

The dressing? The reason I was inspired to create this recipe in the first place … the perfect blend of Manuka honey, seasoning and extra virgin olive oil. I’ve been having Manuka honey since I was working in real estate over 4 years ago now (how life changes!). It was stocked on the shelves on Holland & Barretts the first time I discovered it and I was pretty much hooked – anything that genuinely helps the body and has nutritional value AND is yummy too and I’m sold!

So when The True Honey Company (a wonderful Manuka honey company born in New Zealand) told me it was making its way over to the UK, I wanted to create a recipe that reflected just how effortless and and easy health can be when the product is right. The quality of their Manuka honey is second to none, meaning just one spoonful for the dressing is packed full of natural, sweet taste and powerful antibacterial properties.

The MGO ratings (which they like to describe as the Manuka honey’s horsepower!) start at 300+ and increase to over 1000+! The finite benefits of Manuka Honey are still be explored every day but for me, I’m sold on taste alone even without all the antibacterial and health properties research is showing they have! Wild Rice Salad with Honey Dressing

Wild Rice Salad with Honey Dressing
Author:
Serves: 1 serving
Ingredients
Salad
  • 80g wild rice (mix of red camargue and wild rice)
  • 25g feta cheese
  • 100g fresh pomegranate seeds
  • Small handful of whole walnuts
  • ½ ripe avocado, chopped into pieces
  • 100g edamame beans
Honey Dressing
  • Heaped tsp of Manuka Honey
  • 2 tbs of extra virgin olive oil
  • Juice of ½ lemon
  • Sprinkle of black pepper and sea salt
Instructions
  1. Cook the rice by rinsing it first and then covering with roughly 3 times the amount of water.
  2. Bring to the boil and leave to simmer for 30 minutes or until the rice is cooked throughout - drain the water.
  3. Add all of the other ingredients to one bowl with the rice.
  4. Mix the ingredients for the dressing together with a spoon until well combined.
  5. Pour over the salad and serve!
