Watermelon and Fennel Carpaccio with Orange Dressing

Sometimes all you want when the sun is beating down is a refreshing salad that is full of flavour and juice! I was doing the weekly shop the other day and saw these amazing huge watermelons that I couldn’t resist. Energising, fruity and sweet, they bring me back to days on the boat in sunny Mallorca. Fennel isn’t really one of my favourite ingredients but paired with the watermelon, it gives the perfect crunch and bite to a really simple summer salad.

A sprinkle of nutritious sunflower seeds, fresh flavoursome mint and the perfect orange and whole grain dijon mustard dressing … you have yourself a crowd pleaser. Not to mention the much loved combo of creamy feta cheese with the fresh watermelon.

There’s no cooking involved, just a little bit of chopping and you’re good to go. No fuss, just all the enjoyment!

Watermelon and Fennel Carpaccio with Orange Dressing
Author:
Serves: 1 salad
Ingredients
  • ¼ large watermelon (around 750g)
  • 1 fennel bulb, sliced finely using a mandoline
  • Handful of fresh mint, chopped
  • Sprinkle of sunflower seeds
  • 50g feta cheese, roughly broken
Dressing
  • Juice of half an orange
  • 1 tsp whole grain dijon mustard
Instructions
  1. Cut off the rind (outside) of the watermelon and remove any black pips you can see.
  2. Cut the watermelon into thin slices making a triangle shape.
  3. Lay the watermelon slices down onto the plate and topped with half of you shaved fennel.
  4. Repeat with another layer of watermelon an then top with the remaining fennel, chopped mint, broken feta and sunflower seeds.
  5. Mix the orange juice and dijon mustard together and pour over the watermelon.
  6. Serve chilled!

    My boyfriend and I tried it yesterday as we wanted a light summer dish.
    It was easy to make and very delicious. We changed the recipe a bit and used 100 g of feta as we both like feta.
