Imagine a warm, creamy, seed-popping bowl of goodness and this is that recipe. The heated porridge-like Chia seed breakfast is the perfect warming start for a cold day or when you need something to boost your energy and feel ready to take on the world! Not only is it super low in calories and utterly nutritious but the taste is just sensational. The cooling and fresh mango hits you with a bomb of sweetness that adds such an incredible flavour to the chia. I’ve done the mango in 2 ways (which is just as quick to do) by doing half chunks/half puree. The puree swirls into the warmed chia pudding to fill up the bowl with flavour and the chunks feel like little bits of heaven when eaten with the warm pud!
If you want a delicious grain and gluten-free option for the morning then this is your saviour. I topped it with bee pollen, goji berries and flaked almonds to give the ultimate superfood breakfast in one. I would seriously recommend these added extras if you can get your hands on them, most health-food stores like Holland & Barrett will stock them. This pudding is simply brilliant for a quick no-fuss breakfast, one that your kids will love and keeps you and them going for the day! And if they all have different tastes and likes then take comfort in knowing you can pretty much throw on any ingredients your kids/family/ boyfriend/girlfriend have preference to! Berries, nuts, honey, fruits – whatever you like.
In terms of the health benefits of Chai seeds, the list is extensive. It’s incredible to learn what they contain and the fact that they have actually only relatively recently exploded onto the market for becoming a modern day superfood, of which they are indeed! It’s great to see so many people starting to incorporate Chia seed puddings, or chai seeds just by themselves into their weekly diets. I add a Tbs into my protein shake every day.
The little black seeds, which you wouldn’t think too much of, are one of the most nutrient packed foods out there calorie for calorie. There have been studies done to prove the antioxidant levels in chai seeds are higher than that of any other whole food, including blueberries. They sound pretty impressive right!
