Veal and Cherry Tomato Pasta
I’m not typically a huge pasta girl but sometimes when you really fancy a big, filling bowl of deliciousness – it’s perfect. Veal is one of my favourite meats, it can be a little tasteless depending on what you cook it/have it with but cooked well, it’s a fab lean meat to add to any dish. I made sure to keep this recipe a lovely simple one, one that you can quickly whiz up after a long day at work or when it’s gorgeous and sunny outside and you don’t fancy being in the kitchen for hours! A large bowl of this veal and cherry tomato pasta alongside fresh salads and homemade breads would be my ideal lunch and although it’s a hot dish – it fits perfectly with the summer BBQ theme! Sometimes with homemade tomato sauces the timings can be a little lengthy so this particular sauce is the quickest and easiest one I’ve done to make sure it’s in keeping with all the above and well…why not make our lives a little easier hey!

The pasta with the roasted cherry tomatoes is as fresh and healthy as pasta sauce comes. Seriously, do challenge me on that one! And the fresh sage leaves wrapped inside the little veal parcels gives the whole dish a huge hit of flavour, coupled with the crispy and salty parma ham, marvellous!

Not sure he’d be over the moon me mentioning this but this recipe was actually first tried out on my ever so hungover boyfriend :) In his words…”The perfect healthy hangover dish”. I’m not sure that’s really how I want to introduce it but it certainly has it’s value! Enjoy!

Veal Parcels with Cherry Tomato Pasta

Ingredients
Veal Pasta
  • Whole wheat pasta (quantity to your liking)
  • 2 slices prosciutto parma ham
  • 2 veal escalopes (Makes 4 parcels)
  • 1 stick fresh sage leaves
  • Vine of Cherry tomatoes (4/5 tomatoes) (tbs of coconut oil to cook in)
  • Salt and pepper
  • Tbs coconut oil
Cherry tomato Sauce
  • Vine of Cherry tomatoes (4/5 tomatoes) (tbs of coconut oil to cook in)
  • 2 tbs olive oil
  • 1 tbs balsamic vinegar
  • Salt and pepper
Optional
  • Parmesan cheese shavings
Necessary
  • Tooth picks (For veal parcels)
Instructions
  1. Pre-heat the oven to 180℃
  2. Place both vines of cherry tomatoes on a tray and put into the oven with a drizzle of coconut oil.
Make the veal parcels
  1. Slice each veal escalope and parma ham in half.
  2. Then roll up the halved veal escalope, top with a sage leaf and wrap in the parma ham. Secure with a tooth pick.
  3. Start cooking the pasta by putting it in a pan of boiling water so fully covered.
  4. Get a frying pan and add a tbs of coconut oil, heat this alone for a minute on high.
  5. Then add the veal parcels, turning them every 1-2 minutes. They will take about ⅘ minutes to cook, you can check they are cooked by slicing through the middle of one parcel. You want it just pink for medium.
  6. Place the veal parcels on a plate when ready and drain the pasta once cooked.
  7. Remove all the cherry tomatoes from the oven and divide in 2.
  8. Place half of the tomatoes in a blender along with the olive il, balsamic vinegar, salt and pepper and blend. * See notes
Plate up
  1. Mix the pasta with the cherry tomato sauce and place in a bowl.
  2. Top with the veal parcels (Make sure to remove toothpick) and roasted cherry tomato vine.
  3. Serve hot.
Notes
*You can blend the sauce to your desired consistency but recommendation would be just before smooth.
