Easter Sunday … Christmas day … any kind of holiday is just the best isn’t it?! The supermarket shelves are lined with the most extravagant, treat-filled eggs, chocolate sacks, chocolate popping candy and bursting bubble chocolates! Golden Lindt bunnies triple in size and transport you into the Willy Wonka factory full of delicious creamy milk ears and bush tails, to the years when Cadburys Cream Eggs sat on top of every tree branch and hid in every bush (One of the few times being a young, tall kid seemed advantageous) and the whole day was spent with chocolate round the sides of your mouth!
Those were the days.
When our metabolisms were faster than light and the body could actually utilise some of the copious amounts of sugar consumed.
We may not expend energy at lighting pace anymore, but that doesn’t mean festivities have to be any less indulgent! Maybe not “spoon scooping out an oozing caramel centre” type indulgent, but certainly a chocolate feast filled with mouth popping surprises and creamy goodness. One that makes us feel happy, healthy and good when the day is over. Say hello to my Superfood Festive Chocolate Bark! I’m no child anymore but I’ll bet you’ll have some happy children if this is put in-front of them on Sunday…and most likely some less irate ones too!
It’s bursting full of tasty, crunchy treats that are utterly nutritious and delicious at the same time. Goji berries, popped quinoa, dried mulberries (my latest favourite discovery), fruity coconut flakes and creamy nut butter. They wouldn’t know the difference, and neither would you! It’s rich, indulgent but completely guilt-free compared to shop-bought treats! It’s all about making healthy lifestyle changes, picking the best of what’s on offer for your body and your mind, and I think this is a perfect “best” option.
Also, if it looks tricky to make – it’s not. Although I would love to highlight cookery skills, this one can’t really be the subject! It’s a case of melting chocolate, pouring it onto a pan, throwing down fruity healthy treats (literally because they need to stick) and putting it in the fridge, and voila.
