Sticky Date and Walnut Ice-cream

I can only describe this ice-cream in one way…healthy heaven in a bowl! It’s nutritious ingredients made into one mouth-watering sweet, sticky and crunchy ball of deliciousness! It’s so good it honestly just makes me smile. Make it your new Ben & Jerry’s, serve it with baked fruits, have it as your breakfast bowl or enjoy it in it’s own glory!

It’s literally protein packed nuts with creamy fruits and a little dash of superfood cinnamon and almond milk. One of my quickest recipes to make and a huge crowd pleaser! The dates and banana make the ice-cream classically creamy and sticky and then there’s the little crushed walnut pieces that give it texture and crunch.

It’s a vitamin and mineral rich ice-cream with natural sweetness from the dates and banana. The healthy fats and protein in the walnuts will also work to slow down the absorption of the natural sugars into your bloodstream, which all combined means you can enjoy this incredibly natural ice-cream, guilt-free! Long gone are the days when ice-cream equalled fat storing and bad , it’s now totally ON limits every day!

Sticky Date, Banana and Walnut Ice-cream

Serves: 2 servings
Ingredients
  • 2 bananas
  • Juice of ½ lemon
  • ½ teaspoon cinnamon
  • ¼ cup dates (about 7 dates)
  • ¼ cup almond milk
  • ⅓ cup walnuts
  • Topping:
  • ⅔ Walnuts ground up to sprinkle over the top.
Instructions
  1. In a blender, whizz up the walnuts so that they resemble small chunks, place in a bowl.
  2. Add the remaining ingredients to the blender and mix until a smooth silky texture forms.
  3. Combine with the walnuts and stir with a wooden spoon until well mixed.
  4. Place the mixture into a flat-based tray and put back into the freezer for 2-3 hours until hardened.
  5. Remove and leave for a few minutes to soften then scoop into a bowl.
  6. Top with ground walnuts and serve!

    Not a fan. Unless you really like the taste of banana, this was a pass from me.

      Thanks for the comment, sorry you didn’t like it! The main ingredient is banana so liking banana is a pretty big part of the dessert! Always appreciate the comments though! xx

    The texture was really nice but the lemon made the ice cream too tangy. I’d replace it with vanilla extract and try again next time.
