Healthy & Delicious Soy Grilled Salmon Tacos

These are the best.

Really though, they are … and I feel as though it’s okay to say that because I ate all of these by myself … despite planning on keeping some for Jack to try when he got home from work.

They are an utterly perfect, healthy, filling, simple, a little bit different, a little bit snazzy and a whole lot good, plate of sweet grilled soy salmon tacos and you will LOVE them!

Move over chicken fajitas and move in my favourite new dinner party (and even dinner for just J and I), recipe!

They are FULL of flavour (and colour) and completely moorish bite after bite. The salmon fillets are marinaded in M&S soy sauce and fresh chili, then grilled to a gorgeous golden brown, giving the sweetest warming taste with a kick of heat. The greek yoghurt is the healthier option to sour cream and the red pepper and sweetcorn salsa gives these fish tacos a super fresh and tangy taste.

Top that with creamy avocado and delicious feta cheese and you have yourself a winner!

Soy Grilled Salmon Tacos

Serves: 4 fiilled tacos shells
Ingredients
Soy Salmon
  • 3 x 125g M&S Scottish salmon fillets skinless and boneless.
  • 1 tsp M&S ketjap mannis soy sauce
  • 1 tbs extra virgin olive oil
  • Juice of half lemon
  • Half a red chilli, finely sliced
Tacos fillings
  • ½ large cucumber, grated into thin slices
  • 100g sweetcorn kernels
  • ½ large red pepper, chopped finely
  • 1 large ripe avocado, finely sliced
  • 4 soft tacos
  • 50g feta cheese, crumbled
  • 150g greek yogurt (around 3 heaped tbs).
Instructions
  1. Preheat the oven to 180℃
  2. Marinade the salmon by mixing the soy sauce, olive oil, fresh chilli and lemon in a bowl and pouring over the fillets, leave here for 5 minutes.
  3. Heat a grill pan on medium-high heat and grill the salmon for 2 ½ minutes on each side or to your liking.
  4. Place the soft flour tacos upside-down in the heated oven for 3-4 minutes upside down so they for a taco shape.
  5. Fill the tacos with a mix of the cucumber, sweetcorn, pepper and avocado and top with broken pieces of the salmon fillets.
  6. Finish with a sprinkling of feta cheese and dollop of greek yoghurt ”“ serve hot.
