Roast Beef and Mango Salad

Left-over roast beef, along with roast chicken is my favourite thing to put into a salad the next day. It still has all the flavour – sometimes more and makes it super quick and easy to put a meal together. The sweetness of the mango goes really well with the saltiness of the halloumi and with them both chargrilled, it’s a dream!

Roast Beef and Mango Salad

The mango can be a little difficult to grill so a less ripe mango works best, always ensuring the grill pan is piping hot before you place down the mango. Only use a splash of coconut oil otherwise the mango will absorb the oil and go soggy pretty quickly.

The beef was done for a previous meal but i’ll add it in here for convenience, you don’t need a whole roast beef fillet for the meal so feel free to chop half off and save for another time.

Ingredients
Roast Beef
  • One whole beef fillet
  • 4 garlic cloves
  • 2 fresh rosemary stalks
  • 3 tbs of olive oil
  • pinch of salt + pepper
  • 2 onions, halved
  • 2 tbs of coconut oil for searing and roasting
Salad
  • 1 tbs coconut oil
  • 1 packet of washed rocket leaves
  • 250g halloumi cheese, sliced
  • 1 large semi-ripe mango
Dressing
  • 2 tbs spoons whole grain mustard
  • 1 tbs honey
  • 3 tbs olive oil
  • Juice of ½ a lemon
  • Seasoning
Instructions
Beef
  1. Pre-heat the oven to 220℃
  2. Chop up half the rosemary leaves into small pieces and leave the other half as whole.
  3. Crush 2 garlic cloves, olive oil, rosemary and salt and pepper with a mortar and pestle and rub this marinade all over the fillet.
  4. Sear the fillet on all sides in a hot pan with coconut oil until the outside is a golden brown colour.
  5. Place on a baking tray with the onions and remaining garlic whole cloves.
  6. Roast for 20 minutes until pink, or more if you like it well-cooked.
  7. While the beef is roasting start on the salad.
Salad
  1. Heat the oil up in a grill pan until sizzling.
  2. Place the halloumi cheese onto the grill and only flip once the side face-down is properly grilled otherwise it will stick to the pan.
  3. Set the halloumi aside and place the mango, grilling the same way.
  4. Lay the rocket out on a dish and add the mango, halloumi and sliced beef.
Dressing
  1. Combine all ingredients with a spoon and pour over salad.
