This is one of my most simple and yummiest salads to make! It takes no longer than 5 minutes to put together and can be eaten alone for a light lunch or served as a side dish with some freshly cooked fish. I served it with my Seared Tuna for a filling and protein-rich meal! It’s so delicious and full of crunch and texture, not to mention looks great on a plate because of the colours. The Ginger & Lime dressing has a real freshness and sweet kick to it that bring the salad alive and full of flavour.
If you’re BBQ-ing for the summer and want a selection of dishes to put on the table then this is perfect. Summer in Dubai isn’t as enjoyable because of the heat but London is a different story! I may be biased but I don’t think anywhere in the world beats London in the summer (suggestions welcome!). With the fresh air, green grass and overwhelming happiness of every person that the sun is shining, it’s a glorious place to be! It’s one thing that’s very easy to take for granted when you live in the sunshine all year round, (although I must admit I’m sure people at home think all we do here is sunbathe given their shock when we are just as pale as them!) but seeing how happy it makes everyone is such a pleasure!
Big BBQ’s with everyone laughing and eating brings back such great and happy memories and that’s why I was inspired to create a dish for that. I’m getting the summer butterflies and I have a feeling a lot of upcoming recipes are going to be based around that sunny afternoon at home!
As well as being super yummy the salad is full of nutritious ingredients and the carrots are served raw which means you preserve the maximum amount of fantastic health benefits! Black sesame seeds are full of something called Sesamin which has been proven to help lower cholesterol and is sold by many health stores as a ‘fat-burning’ supplement. A lot of the time these things are just gimmicks and it’s better to take the natural route but there is proof to the advantages of Sesamin which you can research and decide on yourself. Amongst others, Sesame seeds also contain Vitamin E, Calcium and Zinc which are great for skin and bones so it’s an all-round healthy salad! Hope you enjoy!
