New and Improved Healthiest Banana Bread!

One of the first recipes I created on the blog (just a little over one year ago now!) was my ‘Healthiest Banana Bread’ which seems to have gone down a storm, being my most commented and rated recipe.

People on the whole love banana bread … men, women and kids – it suits all!  The crunch from pecans, natural sweetness from the bananas and a moist, almost gooey texture for the bread – who can blame you for loving it!

The ability to quickly cut a slice of fruity healthiness for breakfast, afternoon tea, or even evening snacks beats all else. It’s filling and indulgent (especially if your slices are as thick as mine!) but doesn’t leave you feeling heavy or guilty. This banana bread is also gluten-free, and I’ve made it using a blend of gluten-free flours this time rather than just coconut flour. It comes out lighter and it’s really easy when you buy a pre-made pack of gluten-free flour.

It’s such a popular recipe that when I made it again, I felt like I could make it that little bit better and boost the enjoyment factor for you and me!

It’s simple goodness and I love it … here’s my new and improved Healthiest Banana Bread!

New and Improved Healthiest Banana Bread!

Serves: 6 slices
Ingredients
  • 3 ripe bananas
  • 1 cup gluten-free flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tbs honey
  • Seeds from ½ Vanilla bean
  • 2 Organic eggs
  • 30g Pecans - broken into chunks
  • 1 tsp cashew nut butter
Extra
  • Banana slices to top
Instructions
  1. Pre-heat the oven to 180℃
  2. Add the flour, baking powder and soda to a large bowl and mix.
  3. Whisk in the eggs.
  4. Blend the bananas in a food processor and add to the flour and egg mix, along with the remaining ingredients.
  5. Place baking parchment at the bottom of your baking tin and pour in the mixture.
  6. Top with some extra banana slices and bake in the oven for 40 minutes util golden brown and cooked throughout.
  7. Enjoy!
