Addictive Coconut and Banana Pancakes!

If you’re pancake-crazed as much as I am, you’ll know next week is Shrove Tuesday on the 28th and that means one full day of guilt-free pancake eating! Last year I missed the boat in bringing you guys the perfect pancake day recipe but this year, I’m on top of my game! I’ve teamed up with The Push Doctor to create the tastiest pancake recipe and then give you a break down of all the goodness and nutritional value behind it … I think you’ll like what you see!

In fact, the best part about these pancakes is that they are created to suit all (almost all, as best I can!). They are dairy-free, gluten-free, nut-free and all refined-sugars free, hurrah! Filled with juicy coconut meat, drizzled in honey and acai mix – they are just dreamy. And if you don’t have acai to hand, don’t fret, I’ve demolished a whole plate without it and they were just as tasty! The acai simply brings an added ‘je ne said quoi’ and boosted health benefits!

They are so simple to make with eggs and banana being the main ingredients – they cook easily, stay super moist and warning, are highly addictive! Out of all the pancake recipes on my blog at the moment, these are my current favourites. You can’t beat that coconut and banana combo! Nutritional value (per serving = 3 pancakes)

Calories: 196

Carbohydrates: 23g

Protein: 10g

Fats: 6g

Bananas are a great choice, as they’re a great source of potassium, which lowers blood pressure and improves heart health.

Then there’s coconut. This contains lauric acid, which is known as a Medium Chain Saturated Fatty Acid (MCFA). Despite the name, MCFAs are very beneficial, as they form a compound with strong antiviral and antibacterial properties. MCFAs are used very quickly by our bodies too, so they’re less likely to affect your waistline!

The combination of cinnamon and honey can give you clearer skin and deal with problems such as acne, rosacea and skin allergies. Cinnamon is actually something of a superfood, with its antioxidant, anti-inflammatory and even antidiabetic properties, while honey is a healthier source of sweetness than sugar. It’s packed with vitamins and minerals to help your immune system and the slowly-absorbed sugars are good for your digestion.

Folded Coconut and Banana Pancakes!

Serves: 6 Pancakes (Serves 2 persons)
Ingredients
Pancake Mixture:
  • 1 large ripe banana
  • 2 organic eggs
  • 1 tbs honey
  • 2 tbs coconut milk
  • ½ tsp cinnamon
  • 1-2 tbs of coconut oil for cooking
Coconut filling
  • 2 tbs coconut milk
  • 2 tbs unsweetened desicated coconut
Optional Toppings & Fillings:
  • Fresh coconut meat, thinly sliced
  • 1 banana, sliced
  • Drizzle of honey
  • Acai Drizzle (50g unsweetened acai puree blended with ½ banana)
Instructions
  1. Mash or blend the banana in a bowl until it's smooth.
  2. Whisk the eggs in a a separate bowl and then add in the mashed banana along with the remaining pancake ingredients.
  3. Whisk everything together until it's well mixed.
  4. Put a frying pan on medium heat (this is really important - if you have it too high, it will burn the mixture before it cooks) and add a tsp of coconut oil.
  5. Pour in ⅙ of the mixture forming an even, relatively thin circle and leave to cook for 2-3 minutes. Flip the pancake and cook for a further 2 minutes then put on a plate and fold the pancake whilst it's hot.
  6. Continue this process, adding a little fresh coconut oil each time, until all the pancakes are cooked.
  7. Make the coconut filling but mixing the ingredients together and then spoon it in the crease of the pancake.
  8. Top with sliced bananas, honey and / or acai mix and serve!
