It’s been a little while since I’ve done a new recipe so I’m super excited to share this one with you guys! My most delicious, fluffy and indulgent pancakes yet! I’ve made them Gluten-free so they be can enjoyed all round! Using greek yoghurt as the base creates an amazing, piled high stack of thick but light on the inside, heavenly pancakes that absorb all the lemon flavours and honey drizzle oh so well!
The chia seeds give a welcome crunch and adds texture, as well as packing them full of protein…
I teamed up with RedTag to create this recipe for a healthy and delicious start to the day, be it after a workout or for a weekend feast (or an afternoon snack if you get as addicted to them as I have!). The protein content in these pancakes is just what you need to fuel the day, there’s over 35g of protein from the greek yoghurt and chia seeds alone which is great for levelling out blood sugar levels during the day, reducing snack cravings and helping your muscles repair.

Step 1: Mix together the dry ingredients in a bowl until fully combined.
Step 2: Stir the lemon juice and milk together in a separate bowl, set aside.
Step 3: Combine the greek yoghurt, eggs, honey, and vanilla together and then whisk in the milk-lemon mixture until smooth.
Step 4: Pour the dry ingredients into the wet and stir until just combined, being careful not to overmix, the batter should be thick.
Step 5: Place the coconut oil in the nonstick pan on a medium heat and once all melted, dollop a heaped tablespoon of the mixture into the pan, neatly shaping it into a circle.
Step 6: Cook for 2 minutes on each side until golden brown and serve hot!
Drizzle with honey and top with fresh berries!

November 20, 2016Just made these gems for my boyfriend. We loved them! He said they were the best thing I’ve ever cooked–so obviously I need to get cooking more haha! I added a 1/4 cup extra of milk since it was a bit too thick. That helped. We also ate ours with maple sugar because we’re Canucks and they were awesome. Thank you!

November 13, 2016These pancakes sounds absolutely amazing so couldnt wait to make them for my husband and I for Sunday breakfast. Unfortunately they didnt work out at all. The butter was so thick it looked like a putty rather than pancake butter. You use cup measures instead of grams and ml so thats where i think everything’s gone wrong for me. I dont understand cups at all so what i had to do is find equivalent to gr and ml online which took extra working out.
As a result i ended up wasting a lot of expensive ingredients.
It would be really helpful if you could include other measures in your recipes perhaps in brackets?

Thanks for the comment! Absolutely no problem, I will endeavour to always use a mixture of measurements for everyone so that you don’t have to convert it all. I know a lot of recipes though are in cups and before I bought a set of cup measurements, I too was really confused and frustrated with always having to convert so they might be a good option for the kitchen? I like them simply because then it’s ultra accurate and don’t have to worry about temperamental scales that show different measurements each time!
Re the batter itself, it is meant to be very thick which is different to a lot of pancake recipes – but it does produce really light and fluffy pancakes so it must have been a slight alteration of the measurements as you say.
