Garden Pea and Mint Soup

Mint Velvet

I grew up associating soups with cold winter months to warm my tummy whilst snuggled in a dozen blankets. Nowadays, in the heat of Dubai my views have changed, and fresh, summery soups have become my go-to for an easy and nutritious meal. I’ve teamed up with one of my favourite brands from the UK, Mint Velvet, who have just landed on Dubai’s doorsteps, to create the ultimate simple soup which is not only healthy but utterly delicious.

Apart from the obvious ‘mint’ connection, we wanted to do a dish that represented the relaxed and chic style of Mint Velvet whilst ticking all the right boxes for a flavourful recipe that anyone can make with only a little time to spare. This soup does just that. Perfect for a casual night in and utterly delightful served as a starter for dinner parties. I have actually been thinking about soups as starter options for my wedding menu and this type of colourful, fresh soup is exactly what I’d choose.

With just a few ingredients, this yummy pea and mint soup can be made in 15 minutes with little ‘watching over’ time! Enjoy!

Mint Velvet

Pea and Mint Soup

Pea and Mint Soup

Serves: 4 servings
Ingredients
  • ½ large white onion
  • 1 large handful fresh mint leaves (stem removed)
  • 1 garlic clove
  • 2 spring onions
  • 1 celery stick
  • 1tbs coconut oil
  • 450g organic garden peas (frozen or fresh)
  • 750ml vegetable stock
  • To top:
  • Greek yogurt
Instructions
  1. Finely chop the onion, garlic, spring onions and celery and place in a pan with a tbs of coconut oil.
  2. Sweat for 5 minutes on a medium heat and then add the vegetable stock, peas and mint.
  3. Leave to simmer on a low heat for 10 minutes.
  4. Remove from the heat and place the contents of the pan in a blender. *You may want to do this in two parts.
  5. Blend until smooth and serve warm.
  6. Top with greek yoghurt.
