Eggs for Breakfast: 10 Different Ways

Eggs, eggs, eggs! If you follow my Instagram you may have noticed that I am utterly obsessed with eggs, especially for breakfast. They are so deliciously versatile and full of all the nutritious things that we should be eating to kick start our days! In fact the whole biological value scale (BV) is based on egg protein which ranks at a benchmark of 100, the highest you can get. That scale represents how well our bodies can absorb and use the protein we are consuming…huge props for eggs!

For me, when eggs are cooked in a different way, it’s not like the difference between grilling or roasting a chicken breast, it becomes a completely unique dish with new textures and great flavours that work so brilliantly with a lot of different ingredients.  I’m often just picking out whatever I have in the fridge and combining it in some way with eggs to make for a spectacular breakfast! Having protein for breakfast is a fantastic way to maintain even sugar levels throughout the day and has been shown to help improve metabolism and promote fat burning – I talk more about that here.

What I wanted to do was share a collection of all my favourite eggy breakfasts in one post to inspire people to get creative with them! Some like poached, some scramble, some fried (which are all healthy ways to eat eggs as long as they are cooked with the right oils AKA coconut oil). Use these snapshots as your daily reference to trying eggs in a new and yummy way and you’ll probably surprise yourself with the random fruits and fresh foods that go so well with them – I know I do!

1) Truffle Scrambled Parsley Eggs

with roasted cherry tomatoes, avocado, steamed spinach and rye bread…

Pre-heat the oven to 180℃. Place the cherry tomatoes in a pan and leave to roast and soften for 15 minutes. Whisk 2 eggs in a bowl with a handful of freshly chopped parsley and a glug of almond milk. Cook in a shallow pan to your liking. Toast your bread, steam your spinach, slice your avo, top with the scrambled eggs and drizzle (generously) with truffle oil.

2) Open egg-omelette

Pretty simple this one, just don’t fold over your omelette! Make sure you’ve greased the pan with some coconut oil all over to help it slide out and leave the eggs cooking for about 30 seconds before you add the toppings!

3) Poached eggs with smoked salmon topped with pomegranate on rye bread.

Scrap the muffin and hollandaise sauce, sprinkle over pomegranate seeds and replace with toasted ry bread and this makes for an exceptionally tasty and sweet breakfast!

4) Soft Poached Eggs with Sweetcorn Fritters

Just…the best. The fritters are also gluten-free made with coconut flour!

5) Eggs Baked in Tomato and Spinach

Pair this with some toasted Norlander Bread and you won’t regret it!

6) Fried Eggs with Strawberries and sliced Almonds

It’s fruity, it’s nutty and it offers an overload of amazing nutrients to your body!

7) Baked Eggs in Avocado

Now these aren’t technically ‘baked’ eggs in avocado – these are poached eggs that have been popped into an avocado. But it’s still deliciously good both ways! Poach – Pop – Eat!

8) Fried egg with Parma Ham

Salty meets eggy. It’s an unbelievable match! And if you don’t fancy fried, simply place the parma ham in a closed omelette, wait for a few minutes for it to cook round the edges…perfection!

9) Crushed Raspberries and Poached Egg

with smashed cashew nuts, smoked salmon and rye. 

It’s a bit of a mouthful to say but it’s super simple to make and VERY tasty!

Crush a handful of fresh raspberries with the back of a fork and top your poached egg with them. To smash the cashews, you can use the bottom of a plate or give them a quick whiz in the blender!

10) Oh yes…Pancakes

I couldn’t possibly do an egg feature and not include the best disguised recipe! Pancakes can be loaded with high-protein eggs and we all love them! Make them gluten-free by using coconut flour and top them with whatever you fancy!
