Coconut & Goji Berry Flapjacks

Serves: 8 large squares
- 8 Medjool dates, stone removed.
- ½ cup/95g almonds
- ¼ cup/35g pecans
- ¼ cup/45g Pumpkin seeds
- ¼ cup/38g Sunflower seeds
- 1 tbs Maple syrup
- 2 cups/240g organic oats
- ½ cup/45g Goji berries
- ½ cup/30g Coconut flakes
- 2 tbs Virgin organic coconut oil
- Preheat the oven to 180℃
- Put the dates in a saucepan of simmering water for 5-10 minutes until softened, and then drain.
- Place the almonds, pecans and pumpkin seeds in a food processor and whiz for 10 seconds.
- Add the softened dates and coconut oil and whizz until smooth.
- Place the mixture in a large bowl with all the remaining ingredients and mix until fully combined.
- Grease a baking tray with a little coconut oil and tip the mixture in.
- Use your hands to press the mixture down and place in the oven for 20-25 minutes until golden brown.
- Remove from the oven and leave to cool, then slice and serve!
