Guilt-Free Chocolate and Banana Pancakes

Chocolate and Banana Pancakes
Dry Ingredients
  • 1 Cup all-purpose flour
  • 2 tsp of Cacao powder
  • ½ tsp baking soda
  • ½ tsp baking powder
  • Pinch of Cinnamon
  • Pinch of Sea Salt
Wet Ingredients
  • 1 Large very ripe banana
  • Drizzle of honey
  • 1 Tbs of Greek yoghurt
  • 2 Large Organic eggs
  • ½ Cup full-fat Milk
  • Sprinkle of Cacao Nibs
  • Coconut oil for cooking.
  • Raspberries and extra honey to top
  1. Add the dry ingredients to a bowl and mix together, set aside.
  2. Mash up the banana with a fork and whisk in the eggs.
  3. Then add the remaining wet ingredients and whisk until smooth.
  4. Add the dry ingredients to the wet and mix well until fully combined.
  5. Sprinkle in the Cacao nibs and mix.
  6. Add coconut oil to a frying pan and wait for 30 seconds until pan is warm.
  7. Spoon 2 tbs of the mixture onto the pan and cook each pancake for about 60 seconds on each side - until golden brown.
  8. Serve in a stack and top with fresh berries and more honey!
