Earl Grey Granola

  • 2 cups spelt flakes
  • 1 cup earl grey tea - made from 3 tsp loose tea
  • 1 tsp cinnamon
  • 1 tbs honey
  • 1tsp vanilla extract
  • ⅛ cup coconut oil
  • ½ cup pecans
  • ½ cup pumpkin seeds
  • ⅛ cup sunflower seeds
  • ½ cup dried cranberries
  • 3 dried apricots - chopped
  • 35g whole coconut - chopped into chucks
  • *Optional
  • ½ cup of unsweetened desiccated coconut to top
  1. Preheat the oven to 150℃
  2. Make the tea by brewing 3 tsp of loose earl grey tea with boiling water in a strainer. Let it sit.
  3. Heat the coconut oil and honey in a pan until melted
  4. Mix the spelt flakes, cinnamon, pecans, pumpkin and sunflower seeds in a bowl and pour over the coconut oil & honey - mix well.
  5. Add 1 cup of your earl grey brewed tea and mix.
  6. Line your tray with baking paper and spread out the evenly onto it.
  7. Bake for 50 minutes or until golden brown.
  8. Let the granola cool and add the cranberries, apricots and *optional desiccated coconut.
  9. Store in the fridge in an air tight container, serve with yoghurt or milk and enjoy!
