Easy Oat and Banana Pancakes
  • 2 organic eggs
  • ½ cup oats
  • 2 ripe bananas
  • 1 tsp vanilla extract
  • 1 tbs maple syrup
  • 1 tbs chia seeds (optional)
  1. Blend all the ingredients (except chia seeds) in a blender until smooth & then stir in the chia seeds with a spoon.
  2. Add coconut oil to a frying pan and cook for 3 minutes each side on a medium heat. (Don’t go too high on the heat or they will burn!).
  3. Serve with berries and maple syrup!
