Goji Berry and Coconut Flapjacks

My cravings for carbs have really gone up this month. I think with training in full swing my body is needing more energy and substance which I’m far from complaining about because it means I get to enjoy tasty guilt-free treats like these Coconut & Goji Berry flapjacks!

Flapjacks, Lemon meringue pie and Banoffie Pie were my signature desserts as a kid – I used to sell them to my parent’s friends at dinner parties and my elder sister used to come downstairs and demand (bossiness runs through the family) I make her a tray of golden honey flapjacks. To be honest I think they had 3 ingredients – honey, sugar, and oats … so not the most nutritious snack but hey super easy to do!

Goji Berry and Coconut Flapjacks

The good news I’ve kept the utter simplicity in this recipe but turned these flapjacks into a superfood haven, full of fruity, chewy textures that make them rather addictive! I actually had to send Jack in with some to work because the large flapjack squares were disappearing pretty fast! They’re also loaded with 4 different types of nuts and seeds so are a great energy booster and will nourish the body with healthy fats and protein.

Goji Berry and Coconut Flapjacks

To be honest, having healthy home-made treats in the fridge is like nothing else. That may sound like a small exaggeration but when you need a pick-me-up or just fancy something gooey, sweet and delicious … being able to take something from the fridge that is healthy, guilt-free and nutritious is just perfect. All you need is 10 minutes at the weekend to put all the ingredients together in a bowl and then leave them to bake filling the kitchen with real mouth-watering, homely baked smells! You can also cut the healthy flapjacks up into smaller bites for kids or on-the-go car snacks. Easy as pie. Enjoy!

Coconut & Goji Berry Flapjacks

Serves: 8 large squares
Ingredients
  • 8 Medjool dates, stone removed.
  • ½ cup/95g almonds
  • ¼ cup/35g pecans
  • ¼ cup/45g Pumpkin seeds
  • ¼ cup/38g Sunflower seeds
  • 1 tbs Maple syrup
  • 2 cups/240g organic oats
  • ½ cup/45g Goji berries
  • ½ cup/30g Coconut flakes
  • 2 tbs Virgin organic coconut oil
Instructions
  1. Preheat the oven to 180℃
  2. Put the dates in a saucepan of simmering water for 5-10 minutes until softened, and then drain.
  3. Place the almonds, pecans and pumpkin seeds in a food processor and whiz for 10 seconds.
  4. Add the softened dates and coconut oil and whizz until smooth.
  5. Place the mixture in a large bowl with all the remaining ingredients and mix until fully combined.
  6. Grease a baking tray with a little coconut oil and tip the mixture in.
  7. Use your hands to press the mixture down and place in the oven for 20-25 minutes until golden brown.
  8. Remove from the oven and leave to cool, then slice and serve!
