Chocolate Orange Chia Seed Pudding

Happy Thursday! I am writing to you all from the sunny streets of Moscow this morning. (Rest assured, our choc-chia seed pudding isn’t donning any hidden meat kebabs). I’ve been travelling quite a bit and super excited to share both my Seychelles and Russia experience with you, but in the mean time, I wanted to up the foodie stakes.

Truthfully, this recipe was always intended to be an Instagram video only, because of it’s simplicity, but then I thought how horribly mean of me to exclude all my lovely foodies who don’t use Instagram! This one really is too yummy and too easy to miss!

Creamy, healthy, chocolate chia seed pudding with a hint of natural orange flavour that brings it to life. Your check list is 5 ingredients, a hand whisk and a bowl. Not bad, hey!

I teamed up with Koita milk to create this recipe in the first place, one of the only two cows milk I would drink in the UAE (the other being imported from the UK and double the price). Using quality, organic milk for the choc-chia seed pudding makes all the difference to the creaminess and taste so do pay attention to what you’re buying! The cows that produce Koita milk are from high up in the hills in Italy with absolutely no added hormones, antibiotics, preservatives, stabilizers or basically anything nasty.

I hope you enjoy the recipe! I’ve had it both for breakfast and for an after-dinner dessert and it’s been perfect on each occasion. As you may already know, chia seeds are packed full of protein and using the natural cacao reduces the sugar intake of your typical chocolate related treat. Maybe I’m pushing the boat out, but I think you get all the same flavours from a Terry’s Chocolate Orange, without the bad stuff!

Chocolate Orange Chia Seed Pudding

Serves: 2 servings
Ingredients
  • ½ Cup Chia Seeds
  • 1 Cup / 240ml Koita / Good quality cows milk
  • 1 tbs raw cacao powder
  • 1 tbs of unsweetened desiccated coconut
  • Juice of half large valencia orange
  • Optional for toppings:
  • Fresh raspberries (recommend - they taste great with it!)
  • Coconut flakes
Instructions
  1. Carefully hand-whisk the milk and cacao powder in a bowl until any cacao chunks have dissolved and you have a milky-chocolate mixture.
  2. Add in the remaining ingredients and give it another stir/whisk.
  3. Leave on the side for half hour, and then stir it again.
  4. At this point, you can place it in the fridge for a further 45 minutes.
  5. Consume when you're ready - it can happily be prepared day before and still taste perfect the next day!
  6. (The reason you don't put directly in fridge is because chia seeds can 'freeze' and clump together before gelling).
