Caramelized Banana Porridge

Good morning from Dubai!

I have just got back from a beautiful week in the Maldives and only have two days before I fly again so thought this was the perfect time to share one of the recipes I’ve been having for morning breakfasts at home!

With spending so much of this year traveling, it’s more important to me than ever to keep up a healthy balance in the way of eating and a regular training routine, outside of being at home which I can’t say comes easy! I’m an absolute sucker for hashbrowns at a breakfast buffet (no matter how many other wonderful foods there are!) and a lunchtime sunshine-tipple.

As well as trying to make sure I train most days (I managed 4 out of 6 days in the Maldives – success on this occasion!), I’m also trying to keep up my plant-based eating habits no matter where I am. Fortunately, things like dairy-substitutes for morning coffee are actually getting very easy to find nowadays and it’s not even just about ethical or health reasons for me, I genuinely like the taste!

Hopefully these recipes I’m creating with Alpro’s plant-based drinks will give you some ideas for home but also inspiration for dishes you could ask for if you’re traveling and want something a little more interesting.

This time it’s allll about the humble porridge – just a little spiced up! I went through a good 10 years of my adult life not touching porridge; my only recollection of it was ‘Ready Brek’ topped with honey and so it never seemed like an exciting choice when I had the freedom to make what I wanted. Oh, how the tables turn! Now, a hot bowl of creamy oats topped with a myriad of insanely yummy goodies is all I need to get me out of bed in the morning!

I’ve used Alpro Oat Drink for this one because (no surprise), the flavours go well together but also the Oat Drink makes it super creamy and rich – exactly what you want from a bowl of porridge!

Caramelized Banana Porridge

Serves: 1 serving
Ingredients
  • 80g Oats
  • 350ml Alpro Oat drink
  • Pinch of cinnamon
To top with:
  • ½ ripe banana
  • 1 tsp honey
  • Handfull of frozen blueberries
  • 1 tbs cacao nibs
  • 1 tbs smooth nut butter
Instructions
  1. Add the oats, oat drink, and cinnamon to a saucepan and bring the boil.
  2. Reduce to low-medium heat and allow to simmer for 5-6 minutes, stirring occasionally. Add a dash more oat drink along the way if need be.
  3. In the final few minutes of the porridge cooking, place a small frying pan on a low heat and add a tsp of honey.
  4. Slice half banana into 1cm discs and add these to the frying pan and honey.
  5. Fry for 45 seconds each side until golden brown and add to the porridge when serving.
  6. Top with the frozen blueberries, cacao nibs and nut butter!
